This Chef Spent 3 Years Perfecting ‘The Best Damn Keto Cookies Ever’

If you are eating keto diet, chances are you miss homemade cookies. And if you’ve ever had a keto cookie to try and fulfill a craving, chances are you’ve been plain disappointed—until now.

Chef Rob of the YouTube channel The Keto Chef recently shared a recipe for what he calls “the best damn keto cookies ever.” In fact, these cookies are so flawless, they took years to perfect.

The recipe is actually the creation of Chef Rob’s girlfriend Sam, and it’s a recipe she’s been working on throughout the past three years. With that much trial-and-error, you know the results are bound to be good.

As Rob simply puts it, “This recipe kills it.” And it’s actually quite simple.

The keto cookie recipe start with six tablespoons of peanut butter, a half of teaspoon of vanilla extract, one egg, forth of a teaspoon of salt, and a teaspoon of baking soda. After mixing those simple ingredients together, add in six tablespoons of softened butter and incorporate.

Then it’s time to add in the dry ingredients, including a third of a cup of Swerve sweetener, a fourth of a cup of coconut flour and one cup of almond flour. Mix these three additions with the peanut butter mixture and you have a batter — a batter that needs chocolate chips. Sprinkle in low carb chocolate chips to taste (Rob recommends the brand Lily’s) and fold to combine.

After the batter is complete, roll the dough into balls and bake the cookies at 250 degrees for 10 to 12 minutes. “These cookies get wiped out,” Rob promises in the video. “They are so delicious.”

As a pro tip, Rob recommends dipping the cookies into macadamia nut milk, which sounds pretty killer. Needless to say, keep this recipe on deck for next time you have a cookie craving.
